Colatura di Alici is a refined and appetizing condiment that dates back to the ancient Romans who called it Garum. Colatura is obtained from the process of brining the anchovies, whereby each drop is collected and filtered numerous times to obtain a fragrant liquid. It is amber in color with rich aromas of the sea. It's a healthy condiment that is easy to digest, best drizzled over pasta, salads or vegetables.

Anchovy Colatura is a liquid obtained from the maturation and seasoning process of anchovies pressed in salt, following an ancient process handed down from father to son by the fishermen of Cetara. The anchovies are placed in a container, arranged with the classic 'head-tail' technique in alternating layers of salt and anchovies. Once the layers are completed, the container is covered with a disk, on which weights are placed.
